Topping
  1. Add the almond flour, coconut flour, pecans, oat fiber, sweetener and cinnamon in a food processor and pulse until nuts are well ground.
  2. Add butter to the mix and pulse until it becomes a coarse texture.
  3. Whisk heavy whipping cream, egg and sour cream in a separate bowl.
  4. Add the mixture in the bowl to the food processor and pulse until it is all mixed.
  5. Take the dough you created from the food processor and roll it into a ball and pat it down on a flat plate.
  6. Cover the plate and dough with plastic wrap and chill for 1-2 hours.
Filling
  1. Toss the cherries, sugar substitute, almond extract and cinnamon in a medium bowl.
  2. Pour the filling into an 8-inch square dish or a round baking dish.
  3. Take the dough from the refrigerator and divide it into eight pieces that are about 3 inches across.
  4. Divide the dough into the 8 pieces and place across the filling, staggered.
  5. Bake cobbler at 400°F for 30 to 35 minutes, make sure the topping is browned and cooked all the way through.
  6. You are now ready to serve. Get some low carb ice cream to really set it off.
