When you live in the northeast, there are many things that are exclusive to summer. Hot weather, strawberry shortcake, etc. One other thing that might not be as known if you aren’t from “the north” is garden cucumbers. They are so much better than the cucumbers you get from the grocery store from out of season. One other thing that rivals the greatness of garden cucumbers is garden tomatoes.
If you aren’t sure what I mean by this, these are tomatoes and cucumbers that are grown by local farmers in actual gardens. Not the genetically modified crap that you are forced to eat from the grocery stores the other parts of the year that are not in season. If you haven’t experienced this, you might be thinking there can’t be that much difference between a store-bought cucumber or tomato and one pulled from a local garden, you need to make it happen. If you taste a cucumber or tomato from somewhere like Subway (eat fresh) and then try a garden cucumber or tomato sourced locally, you would be blown away.
So what is a cucumber salad? One popular recipe that people use is German Cucumber Salad. It involves cucumbers (obviously), sour cream, white vinegar, sugar, fresh or frozen dill, salt and pepper (to taste).
This is going to be very different. This is my cucumber salad. It’s not going to have cucumber as the only vegetable. So why isn’t it named after any of the other vegetables? Because clearly, cucumbers are the standout.
My Italian great aunt Emily made this cucumber salad. Of all the family members, I am proud to say I do the best job of recreating it. I did have to make one alteration. This is a keto blog after all and we can’t be having sugar in there.
Cucumber Salad Recipe
It’s a very simple recipe. Here are the ingredients you will need:
- Vidalia onion
- White vinegar
- Vegetable oil
- Splenda (Aunt Emily might not like this not being sugar)
- Garlic salt and pepper
Well, that’s it. Knock yourself out. You think I was going to have exact measurements of all of the ingredients? That’s not how Italians do it. Oh, you need to know exactly how much to put of everything?
I guess I can give you a little more information.
So you’re going to go 2 parts oil, one part vinegar. That’s how you get the consistency that makes this cucumber salad so great. As far as the rest goes, you have to tailor it to how you like it. If you’re a garlic person, hammer it with garlic. If you love onion, dump a ton of onion in there. Etc.
So you put all of the ingredients in a big bowl and mix it around. Here’s a little pro tip: Get all of the ingredients mixed up and put it in the refrigerator for an hour or two before you eat it. The longer it sets, the better. Heck, I like to make enough to where there are leftovers that I can let soak in the bowl overnight. The cucumbers, tomatoes and onion really soak in the ingredients and it’s even better in the morning.
