Many people on the keto diet gave up on enchilada night. Well, despite sacrificing the shell, this is an awesome keto dish. Here is how to make low carb enchiladas. If you absolutely cannot do without the shells, check out our keto burritos with a shell.
Low carb enchiladas
- 1 lb ground beef
- 1(14 ounce) can enchilada sauce or 1 (1 1/4 ounce) package dry enchilada mix
- 1 green onion, chopped
- 1 cup shredded cheddar cheese
- 4 eggs
- 1⁄4 cup heavy cream
- 1 teaspoon butter
- Salt and Pepper to taste
On a skillet brown the beef while continuously stirring.
In a mixing bowl beat the eggs and add the cream. Beat well until very well combined and pour on a heated crepe pan that is slightly buttered. Put enough egg mixture to coat the pan and let it cook.
Remove the excess fat from the beef and add a small amount of sauce or the dry mix (see directions in this case). Place a crepe inside a baking dish and coat with small amount of sauce and beef and roll.
When all are rolled add remaining beef and sauce.Sprinkle chopped green peppers and cheese.
Bake 350oF for 10-15 min or until cheese is melted and a little bubbly.
