Many people think when they are on the keto diet they aren’t able to enjoy muffins. Wrong! Check out this recipe for some low carb mini muffins.
- 7 oz. of prosciutto
- 9 large eggs
- 3.5 fl. oz. of coconut milk, canned
- 2 oz. of shaved almonds
- 5 tbsp. of butter
- garlic clove, minced
- 5 oz. of cremini mushrooms
- 1 tbsp. of coconut flour
- 5 oz. of spinach, cooked and drained
- Salt and pepper to taste Melt the butter and sauté the garlic and mushrooms.
When they’re cooked remove from the heat and let it cool. On a bowl mix the eggs, coconut milk, flour, spinach and the mushroom mixture. Season. Use a cupcake form and line the indentations with the prosciutto making sure all the sides and bottom are covered. Spoon the egg mixture and top with the almonds. Put in a 350ºF oven for about 20 minutes or until the egg is firm and the top is golden.
This makes four very large servings. Depending how big of an eater are, you could probably get by on half of a serving. It totals at 5 net carbs and 564 calories, which makes it about the ultimate keto breakfast. You can run all day on 564 calories easily.
